Before the 1800's all bread on Earth was leavened this is the way, with a "sourdough" culture of native yeasts, and naturally ocurring lactobacillus . Nature has always provided this leavening method for bread which transforms the ground organic grains into a chewy textured, open crumb loaf of bread with a flavor profile ranging from mild to tangy. Not only that, but natural leavening improves the keeping quality of the loaves with no preservatives or dough conditioners. For those interested in 100% whole grain bread, natural leavening renders whole wheat more digestible by inactivating phytic acid, which is present in all wholegrain flours and acts to bind up minerals such as calcium and magnesium making them unavailable to the body. The "sourdough" process breaks these bonds naturally, making more nutrients available and improving the taste and texture of the bread.
